Sweet Potato & Courgette Tots

January is all about kickstarting nutrition. So what better way to wean your little one, than with some veggie-filled goodness – baby and mum approved!

Ingredients

  • 1 Large Sweet Potato
  • 1 Courgette
  • 1 Tsp Onion Powder
  • 1/2 Tsp Garlic Powder
  • 1/4 Tsp Smoked Paprika
  • 1 Tbsp Breadcrumbs

Method

  • Using a fork, pierce the skin of your sweet potato. Put in the microwave and cook on high for 12 minutes, until soft inside. Once cooked, set aside to cool.
  • Grate the courgette on the smallest setting of your grater - and add to a bowl.
  • Once cooled, scoop the inside of the sweet potato into your bowl and mix to combine the courgette.
  • Add in the rest of the ingredients & mix together.
  • Take a spoonful of the mixture, and roll into tot shapes using your hands.
  • Place on a baking sheet lined with parchment paper.
  • Bake in the oven at 200/180 fan for 12-15 mins until golden brown on the outside.
