Ingredients
- 1 Large Sweet Potato
- 1 Courgette
- 1 Tsp Onion Powder
- 1/2 Tsp Garlic Powder
- 1/4 Tsp Smoked Paprika
- 1 Tbsp Breadcrumbs
Method
- Using a fork, pierce the skin of your sweet potato. Put in the microwave and cook on high for 12 minutes, until soft inside. Once cooked, set aside to cool.
- Grate the courgette on the smallest setting of your grater - and add to a bowl.
- Once cooled, scoop the inside of the sweet potato into your bowl and mix to combine the courgette.
- Add in the rest of the ingredients & mix together.
- Take a spoonful of the mixture, and roll into tot shapes using your hands.
- Place on a baking sheet lined with parchment paper.
- Bake in the oven at 200/180 fan for 12-15 mins until golden brown on the outside.
