Ingredients
- 125g plain flour
- 1 small ripe banana
- 75g unsalted butter
- Low sugar jam
Method
- Break your banana into a bowl and give it a mash with a fork
- Add in the butter and using an electric whisk, mix until it is smooth
- Add in your flour and stir to combine (top tip: trust the process, if it looks like it's not coming together, keep stirring and it eventually will)
- Once the ingredients are combined, use your hands to knead the dough into a ball
- Sprinkle some extra flour onto your work surface and then using a rolling pin, roll out the dough until it is about 5mm thick
- Next, grab your cookie cutters - you can use any shape you like, we are using round cutters and smaller heart cutters for the top of the biscuits
- Cut all of your biscuits into circles then take half of them and use the smaller heart cutter to cut out the middle (top tip: make sure to cut out even numbers of your biscuits because they will be sandwiched together)
- Take the biscuits that were not cut in the middle and place them onto a lined baking tray, then add a dollop of jam onto each and spread it using the back of your spoon
- Place your biscuit lids on top and then using a skewer add an extra little design on top
- Bake your biscuits at 200 degrees for 8 minutes, until golden brown on top
- Once cooled, they are ready to enjoy!
