Banana Muffins

Although our little ones are sweet enough (on a good day), when life gives you overripe bananas – there’s only one real solution. Packed with oats AND no added sugar, these muffins are a tasty treat that won’t have you spending hours baking!

Ingredients

  • 1 brown banana
  • 1 large egg
  • 1 tbsp peanut butter
  • ½ teaspoon vanilla extract
  • 55g rolled oats
  • ½ tsp baking powder

Method

  • Heat your oven 200°C or 180°C for fan assisted ovens
  • Mash your banana in bowl
  • Add your large egg, peanut butter, vanilla extra, rolled oats and baking powder
  • Give it a mix
  • Line your baking tray with some muffin cases and your mixture (sprinkle some oats on top for an extra bit of texture)
  • Bake in the oven for 20-25 minutes
  • Enjoy!
