Ingredients
- For the chicken:
- 1 chicken breast
- 2 bags of Piccolo BBQ Popped Corn Chips
- 1 egg
- 3 tbsp flour
- Yogurt dip:
- 3 tbsp Greek Yogurt
- ¼ tsp smoked paprika
- ¼ tsp garlic powder
- ½ tsp olive oil
- Juice from lemon wedge
Method
- Chop your chicken into bitesize pieces and remove any additional fat
- Slightly open your bag of Piccolo BBQ Popped Corn Chips to remove the air before crushing into a fine, breadcrumb like consistency
- Split your flour, eggs and crushed up Piccolo BBQ Popped Corn Chips into three different bowls
- Add one chicken piece to the flour, then egg and then Piccolo BBQ Popped Corn Chips until completely coated
- Repeat for the remaining chicken
- Pop onto a lightly oiled baking tray and bake in the oven at 200 degrees for 20-25 minutes until the chicken is fully cooked
